For the third year in a row, we are bringing Departure’s Duck Month back. This annual holiday tradition has proven to be a Denver fave for the holidays. Featuring a whole roasted duck—including traditional Mandarin pancakes, fried rice with duck trimmings, and house-made duck broth soup to get the meal going! Departure’s Peking-style Duck offerings are also served with all the traditional garnishes including cucumbers, scallions, pickled kumquats, and signature hoisin and plum sauces.
The process of making this duck is truly a process. The duck is first curried in seven spice, and salt and vinegar overnight. It is then blanched in a Shaoxing wine, honey, salt and seven spiced mixture. After that, the duck hangs for 24 hours to let those flavors brew. Finally, the duck is roasted for one hour and the flash fried.
Our Chefs present the whole duck to your table. They then take the duck back to the kitchen to get to work on the carving process. Each duck serves 2-4 guests, is just $100 per duck, and is available every night of December.
